The season began early this year. With only 150 taps set, we had our first boil on January 23rd. More taps were set in the upcoming days for a total of 750 this year.

Sap flow has been steady and we spent a full day boiling off the next batch of syrup. Batch #2 is amber in color with a rich maple flavor we don’t usually see until mid-season. This batch will surely be popular with dark syrup lovers!

We’ve been preparing for this year’s season. The wood is stacked, tubing lines have been repaired and a stronger vacuum pump installed. Now we wait for Mother Nature to give us the signal!
We will post updates and hope to be tapping in a couple of weeks. If all goes well, we should be producing syrup by the second week of February.
